- 2 large russet potatoes
- 1 large onion
- 2 large eggs
- ½ cup all-purpose flour
- 2 teaspoons coarse kosher salt
- 1 teaspoon baking powder
- ½ teaspoon freshly ground black pepper
- 1 cup oil for frying
Grate the potatoes into a bowl.
Add the eggs, flour, salt, baking powder, and pepper, and mix until the flour is absorbed.
Put a 1oz of olive oil in each of the egg pan trays for the combi oven and make pack your potato pancakes into the pan.
Cook at 375°F with the vent open for 8 Minutes or until you get the desired browning and crispness.
Garnish with sour cream and chives.
