Fine Dining Restaurant Cooks in Unity by Using Customized Thermaline S90 Cooking Range from Electrolux Professional


Located on the West side of Houston, Texas and serving some of the finest French cuisine that greater Houston area has to offer, Le Mistral Restaurant has carved a niche for itself that many locals and visitors have been seeking. Chef and owner David Denis wanted a customizable cooking range suite that would meet his needs while also performing as the workhorse of his kitchen. He found exactly that in the Electrolux Professional Thermaline S90 Modular Range.


The Electrolux S90 Range allows for a wide array of cooking functions to be carried out in a flexible design to meet the most demanding kitchen’s requirements. Chef Denis was able to select the modular units he needed and arrange them into a linear kitchen suite that allowed his staff to work across from each other. His creation resulted in a 14-ft. long range with 6 units on each side, including 2 units with 6 high powered open gas burners each, 2 electric bain-maries, an induction cooktop, a pasta boiler, a double fryer, a gas griddle and a gas char broiler.

“I previously used Electrolux equipment when I was working in Switzerland and always had a good experience with it,” said Chef Denis. “When I came to the U.S., I knew I wanted the same performance and reliability for Le Mistral’s kitchen and immediately turned to Electrolux Professional.”

Not only was customization important to Chef Denis when it came to selecting a cooking range for Le Mistral, but he also considered energy-efficiency of the equipment. The S90 induction cook top unit, which Le Mistral uses, provides electricity savings of up to 75% compared with conventional cooking methods by transferring energy directly within the pan metal producing almost no wasted heat. Efficiency features such as this are what make the S90 part of the Electrolux GREEN SPIRIT product range which includes only products that provide significant savings in the consumption of gas, electricity, water, detergent, as well as reduction in CO2 and NoX emissions.

In addition to seating in the main dining room, Le Mistral guests can dine at the chef’s table inside the kitchen where they can witness the workhorse of the kitchen, the S90, in action. Popular entrées on Le Mistral’s menu include slowly braised veal osso bucco in balsamic and port wine with parmesan risotto and shiitaki mushrooms and 12-ounce aged prime Angus Ribeye with green pepper Cognac sauce, French fries, Bearnaise sauce and sautéed French green beans. Vegetables included in these dishes and others are quickly and evenly sautéed on the open gas burners of the Electrolux S90 Range.

The S90 griddle unit allows for perfect searing of meats and fish,” said Chef Denis. “The ability to arrange the units back-to-back so that the kitchen staff can work across from each other is instrumental in creating cohesiveness and efficiency in my kitchen and it provides quite a show for guests dining at our chef’s table.”

In addition to one-sided Electrolux S90 units that can be positioned against a wall or back to back such as those at Le Mistral, S90 units are also available as island units with pass-through oven and work stations on both sides and as freestanding units on legs or wheels. Each installation type is customizable with a wide variety of cooking units that include neutral worktops, gas charbroilers, electric and gas solid cook tops, full surface induction cook tops, high powered open gas burners, electric and gas fryers, electric bain-maries, gas griddles, pasta cookers and water mixing units.

Special LaserTec cutting permits precise and seamless connections between cooking units, facilitating the movement of heavy pots and pans across flat surface cook tops. Smooth worktops, rounded corners and no visible screws simplify the cleaning process. With no gaps or openings, neither food nor liquid can penetrate the S90’s surface, eliminating bacteria build-up and resulting in excellent hygiene.

The unique internal frame of the S90 is a single block constructed of AISI 304 type stainless steel ensuring absolute sturdiness. “The quality of the stainless steel that Electrolux uses is a key reason why I love their products,” said Chef Dennis. “I know the equipment will last longer than other brands that do not use high quality stainless steel.”
