Blanes, Costa Brava
Blanes is located in the Spanish region of Catalonia on the Costa Brava. The resort is popular with Spanish holidaymakers and also attracts international tourists due to its location just 60 kilometres north of Barcelona airport. It was once a small fishing town and still retains some of its original charm though the main beachfront is now lined with high-rise buildings and all the trappings of modern tourism.
The resort's four-kilometre stretch of coastline consists of wide sandy bays and small rocky coves, most of which are well served with water sports and other tourist facilities. The beaches are the main attraction for the vast majority of tourists but are never over-crowded. And if you tire of the beach there are plenty of interesting day trips and local excursions to be enjoyed within easy reach of the resort.
Back from the seafront you will find evidence of a town steeped in history, with ancient monuments, churches and buildings still standing as reminders of this area's colourful past. The medieval castle of St Joan still looks down on the town, but now you will also find international restaurants, ice cream parlours and high-rise hotels alongside the traditional Spanish street markets, fiestas and folk dancing fairs.
Blanes is famous for its two botanical gardens, which boast 11,000 different plant species including some of the most important collections of yucca palms, aloes and cacti in Europe. The gardens, developed from the local habitat and contributions from private collections and nurseries around the world, attract more than 300,000 visitors a year.
Blaucel & Blaumar
The 4-star Hotel Blaucel is just a few minutes away from the resort centre and 100 metres from the beach. With a total of 138 rooms, it provides services of the highest standard with all kinds of shops, bars, cafes, restaurants and nightlife. Its homonymous 3-star Hotel Blaumar is right next-door and has a total of 279 spacious rooms.
A great example of a modern and multi-functional installation that combines the technology and innovation of both brands Electrolux and Zanussi Professional, the new kitchen was designed to meet the requirements of both hotels at the same time.
The local agent Ginés Guillén S.L. managed the project and made sure all the elements were included to prepare and serve elaborate à-la-carte menus to all guests, as well as to organise impressive buffets and banquets. A total of EUR 160,000 was invested to furbish a fully equipped 450 m2 kitchen serving 1,000 meals a day plus banquets.
Preparation
There are four separate preparation areas defined according to the type of food treated, each of which equipped with a Zanussi Professional Active range refrigerated table. Their stainless steel top has a total length of almost 5 meters.
Cooking
The central cooking area is equipped with a 5-meter long island from the Zanussi Professional N900 range that consists of open burners, fryers, fry-tops and pasta cookers. The high productivity zone comprises tilting braising and boiling pans from the N900 line. Finally, two 20 GN air-o-steam combi-ovens (one 1/1 and the other 2/1) as well as one 20 GN 2/1 air-o-chill blast-chiller make up a complete air-o-system that allows preparing large quantities of food whilst saving space, time and labour cost and maintaining the strictest HACCP control levels.
Dishwashing
Even here both brands are represented, with a large Electrolux WTZ140 rack-type system and a Zanussi Professional LS10EA hood type model.
